Pan-fried pizza recipe of 09-07-2016 [Updated on 05-04-2019]
The pan pizza is a clever recipe, indeed, very clever, which obviously does not want to replace the recipe of the real Neapolitan pizza with which it has little to do. There pan-fried pizza in fact it is a trick, when your four-year-old daughter asks you at dinner time to prepare her a pizza and you want to satisfy her at any cost, all you need is a sachet of instant yeast for savory pies and in 15 minutes become her heroine by bringing one of her favorite dishes to the table with minimal effort.
The pan pizza is therefore perfect for when you have very little time but you want something delicious and tasty, or you want pizza but without turning on the oven: P
I chose a classic filling (also vegetarian!) With tomato and mozzarella, but of course, you can fill it as you like :) I'm still in Rimini, second day of the stand and my feet are asking for mercy, but there are only 10 hours at the end, I can do it: D then I leave you to the recipe for this pizza in a pan and I go to work, catch those who pass by here: *
How to make pan pizza
Combine sifted flour and yeast, salt, warm water and oil in a bowl.
Mix the ingredients and work the mixture until you get a soft and non-sticky dough (if necessary, help yourself by adding a little extra flour, but don't overdo it: the dough must remain soft!).
No tepi of rest are necessary, you can immediately roll out the dough with a rolling pin on a lightly floured pastry board. Form a thin disc.
Heat a thick-bottomed non-stick pan well, then add a drizzle of oil and transfer the dough to it.
Mash the tomatoes in a bowl, season them with salt, oil and basil and use them to fill the base, leaving some dough free along the edges, like a cornice.
Cover with the lid, lower the heat and cook for about 10 minutes.
When it starts to brown a little underneath, add the diced mozzarella and a little fresh basil, cover again with the lid and cook for about 5 minutes, always over low heat, just to melt the cheese well.
Your pan pizza is ready, you just have to cut it into wedges and serve it immediately!

How to make pan pizza
To prepare an excellent non-stick pan pizza some tricks are needed.
The pan should be well heated over medium heat and then greased with extra virgin olive oil to prevent the pizza dough from sticking.
At this point the pizza dough is placed in the pan and left to cook until bubbles form (it takes about a minute). You must then turn the base of the pizza (using a spatula or turning the mixture on a plate, just like you would do with an omelette), put it back in the pan and garnish it with the sauce you have chosen.
Lower the heat and put the lid on so that the sauce can easily mix and, at the same time, the base does not burn. Then it is left to cook for 4/5 minutes, being careful not to let the base scorch (this is the most unpleasant part of the whole recipe, because you have to reconcile the need to have a crunchy base with not letting it burn).
THE cooking times of pizza in a pan they are therefore around 5/6 minutes: about a minute to cook the first side, then another 4 or 5 minutes to complete cooking.
