Separate the egg whites from the yolks. The yolks are mixed with sugar, honey and vanilla sugar. Bring to the boil until it starts to boil. When it starts to thicken, remove from the heat and leave to cool. When the cream is slightly warm, add the diced butter and the essences. Leave for about 5 minutes then add finetti and mix until you get a fine and perfectly homogeneous composition.
