These Polish biscuits are spiked with anise extract. They are traditionally eaten around Christmas.

IngredientsMakes: 5 dozen, depending on size

  • 225g unsalted butter
  • 200g margarine
  • 400g caster sugar
  • 5 eggs
  • 950g plain flour
  • 6 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 teaspoons anise extract

  1. Preheat oven to 180 C / Gas 4.
  2. Cream the butter, margarine and the sugar together. Stir in the eggs and continue to beat. Add the anise flavouring. Stir in 875g of the flour, the baking powder and the salt. Mix until the dough is soft. Add the additional flour if needed. Chill the dough.
  3. On a lightly floured surface roll out the dough and cut with pastry cutters. Place biscuits on greased baking tray.
  4. Bake at 180 C / Gas 4 for 12 to 15 minutes. Decorate as you wish once cooled.

This recipe tastes just like the cookies my grandmother made. We called them pierniki. I've tried several other recipes and they just weren't right. These have the same texture and flavor I remember. My grandmother used lard. I used half crisco and butter. I am thrilled to have found this truly polish cookie. They are delicious and are my favorite Christmas cookie! Thanks Darlene!-22 Dec 2001


I am not much for rolling and cutting out dough so we shaped the dough into a nice thick log, wrapped it in waxed paper and sliced the dough 1/4" thick, sprinkled candy cake decorations on top as you would a sugar cookie and baked them for 8-9 minutes. My guys loved them as they weren't too sweet and still had a nice flavor.-09 May 2002
