These simple muffins are rolled in cinnamon sugar whilst still warm. There mightn't be a better breakfast treat after a long lie-in. Serve warm with coffee and a little butter, if desired.

  • 200g plain flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon nutmeg
  • 100g caster sugar
  • 75g butter or margarine
  • 1 egg
  • 120ml milk
  • 100g caster sugar
  • 1 teaspoon ground cinnamon
  • 75g butter or margarine, melted

  1. Preheat oven to 180 C / Gas 4. Grease a 12-hole muffin tin or line with paper cases.
  2. In a large bowl, whisk together flour, baking powder, salt and nutmeg. In a separate bowl, cream together 100g sugar and butter. Beat in egg. Stir flour mixture into butter mixture alternately with milk. Beat well. Spoon into prepared muffin cases.
  3. Bake in preheated oven for 20 to 25 minutes. While muffins are baking, combine 100g sugar and 1 teaspoon cinnamon.
  4. Remove muffins from oven and muffin tin. Immediately, dip the tops of the muffins into the melted butter, then into the sugar/cinnamon mixture. Repeat with each muffin, until all muffin tops are covered. Serve warm.
