I used Laura Sava's dough recipe from "Soft, soft and fluffy croissants!".

  • 1 sachet of dry yeast
  • 1 teaspoon grated salt
  • 2 tablespoons honey
  • 250 ml of warm milk
  • 500 g flour
  • 25 g melted butter
  • Filling:
  • 300 g of fresh sheep's milk
  • 2 eggs
  • 100 g gray
  • sugar
  • grated lemon peel
  • 50 g raisins
  • For anointed:
  • 2 yolks
  • 2 tablespoons milk
  • sugar

Servings: 9

Preparation time: less than 120 minutes

RECIPE PREPARATION Cheese:

I put the ingredients in the pan of the bread machine and I selected the kneading and leavening program.

Meanwhile, prepare the filling: crush the cheese with a fork, add beaten eggs, sugar to taste, semolina, grated lemon peel and raisins.

When the dough is ready, place it on the floured table and spread it on a sheet of suitable thickness. Cut rectangles (size about 10/12 cm) and put the filling in the middle of each (about 2 tablespoons). They are folded like an envelope and placed in a tray lined with baking paper, leaving a distance of a few centimeters between them. Grease with the yolk beaten with milk, sprinkle sugar on top and put in the oven on the right heat until nicely browned.

Optionally, for serving, you can sprinkle with vanilla powdered sugar.


  • It took
  • 500-550 g flour
  • 25 g fresh yeast (or 7 g dry)
  • a teaspoon of salt
  • 80 g of sugar
  • two eggs
  • 60 g butter
  • 180 ml of milk
  • 1/2 teaspoon lemon peel and orange (or orange peel powder)
  • Filling
  • 450 g ricotta (urda or sweet cottage cheese)
  • 130 g of sugar
  • two small eggs
  • a pinch of salt
  • a vanilla essence
  • a greased egg and vanilla powdered sugar for decoration


Delicious cheeses

The cheeses are perfect for children, being both useful and tasty. In order for the cheeses to come out well and not need a lot of flour or semolina, drain the cheese under pressure to remove excess liquid.

1. Lay a piece of gauze folded a few times in a strainer, put the cheese, cover with the ends of the gauze, put a weight on top. Allow the excess liquid to drain for two hours.

2. Sift the cheese through a sieve. Beat the egg, egg yolk and sugar until foamy. Add the cream and mix.

3. Add the cheese to the egg and cream mixture, then the flour and semolina, beat with a blender. Leave the dough in the fridge for 30 minutes.

4. Divide the dough into pieces of about 40 g. Roll them in flour and form cakes 1.5 cm thick. Sprinkle the cakes with flour on both sides.

5. Heat the oil in a large skillet. Put the cheeses in the hot oil and fry them until they are browned on both sides over medium heat (do not try to turn them until they are well browned, otherwise they will fall apart!). Then fry over low heat with the lid on, so that the cheeses ripen inside as well.

My cheese was a bit soft, although I put two tablespoons of semolina I think I shouldn't put the egg whites. So I packed them in the form of bags, not envelopes, and I couldn't put so much cheese.

Preparation Cows with cow's cheese and raisins (homemade cheese)

Start preparing the dough. I put all the ingredients mentioned in the recipe in the bread machine, first the liquids, then the solids and I started the machine on the dough / dough program (1.30 h). In this program, the machine kneads the dough by itself and leavenes it.

If you do not have such a bread machine, then the dough is prepared like this:

  • Sift the flour in a bowl (optionally, I don't sift it at all and everything always comes out very well) and mix with the salt and the rest of the sugar.
  • Make a hole in the middle, add the egg, pour the oil and milk with yeast.
  • Start kneading with your hands or the mixer
  • Knead a suitable dough that is hard, elastic, but not sticky. When the dough no longer sticks to the bowl or hands, cover and leave to rise for 45 minutes, until it doubles in volume.
  1. Preheat the oven to 180 degrees and line the tray with baking paper
  2. The leavened dough is carefully poured on the plate sprinkled with a little flour
  3. Divide into 8 equal parts that are rounded in turn, then cover with a kitchen towel and leave to rise for 10 minutes.
  4. Meanwhile, prepare the filling: in a bowl add the ingredients for the filling and mix well.
  5. From each ball of dough form nests, which are placed in the tray lined with baking paper and prick with a fork (not to swell when baking)
  6. The nests will be filled with the cheese composition, then sprinkled with raisins and orange peel powder
  7. The edges of the nests are greased with beaten egg yolk
  8. Bake the baskets for about 20 minutes at 180 degrees, or until nicely browned
  9. Leave to cool in the pan, after which they can be served plain or powdered with vanilla sugar

Cow and raisin cheeses (homemade cheese)

The cheesecakes have always been close to my soul. Not only did I eat them at home at the highest speed, but I often bought them from a pastry shop on my way to school.

Many times, the cheesecakes kept me hungry until I got home. I had a long way to go between school and home, and this pastry was my salvation. I could only find them in the form of an envelope, those famous Poale-n gâu. At that time, I didn't even suspect that there could be other models of cheese!

Only now, in adulthood, I discovered a real collection of presentations and variants. What is certain, however, is the pies made with cow's cheese and raisins, flavored with vanilla, are a dream!

Ingredient:

  • 50 ml oil (I had olive oil with lemon)
  • 50 grams of sugar
  • 350 grams of flour
  • 1/2 sachet of dry yeast (4 grams)

  • 100 grams of cottage cheese
  • 25 grams of sugar (or to taste)
  • 50 grams of raisins
  • 25 grams of semolina
  • vanilla extract
