RECIPE PREPARATION Milk rice:

Put the rice to boil. When it is almost boiled, drain the water, wash it and put it back on the fire in milk. Add the sugar, vanilla sugar, grated lemon peel. Leave it to boil until the milk decreases.


  1. The rice is washed well with warm water and rubbed in the palms to soften and peel, the water is changed about 4-5 times
  2. Put the milk, cinnamon and lemon peel in a saucepan.
  3. Keep it on the fire until the milk reaches the boiling point.
  4. As soon as it boils, remove the cinnamon and lemon, using a strainer.
  5. Add the rice and keep it on the fire for 20 minutes.
  6. Stir occasionally so that it does not stick.
  7. Add the sugar and simmer for 15 to 20 minutes.
  8. The rice is ready when it turns yellow and the grain is boiled (soft)
  9. Serve on individual plates, or in a deep plate.
  10. When the rice pudding is cold, toss a cinnamon powder on top.

As a serving, you can put the rice in a small bowl, press it well and then turn it on the plate. You can use round, square or conical bowls by making a master chef presentation.

Instructions

Making homemade rice milk is very simple and can be divided into 3 steps:

  2. Add all the ingredients in a blender (boiled rice, water and maple syrup) and mix until smooth.
  3. Strain the mixture using a bag of walnut milk, a cheesecloth, a napkin or a strainer. This step is optional.

Your homemade rice milk is ready! If you keep the leftovers in an airtight container in the refrigerator, they last up to 5 days.

Additional tips

  • To make this recipe, you can use any kind of rice, but my favorites are brown rice and white rice with short grain.
  • The sweetener is optional, although you can use sugar or syrup, whatever you prefer. Just add it slowly to taste.
  • There are some recipes with rice milk that contain a little salt to enhance the flavor or even a little oil, but I like it more without them.

Rice milk

Rice milk, like soy milk or almond milk, is a good substitute for animal milk for those with lactose intolerance. It has low fat, few calories and can be used successfully in the preparation of cakes. Rice milk contains more carbohydrates than cow's milk, but does not contain lactose and cholesterol. It has a lower calcium and protein content than cow's milk. Rice milk can therefore be great for breakfast cereals for your baby. How do I make rice donuts with milk?

• 250 ml of lukewarm water

Put all the ingredients in a blender and mix for 2 minutes, until smooth. The milk obtained can be used as such, as a substitute for cow's milk or coffee. For this, you can add 1 teaspoon of carob powder, cereal coffee or chicory.
